This week's #cocktailoftheweek, The Pom Royale, is my holiday play on a Kir Royale champagne cocktail. The traditional Kir Royale cocktail includes a hint of Crème de Cassis, a blackcurrant liqueur, topped with champagne or Prosecco. Instead of Crème de Cassis, this Pom Royale cocktail includes a combination of holiday flavours with tart pomegranate juice and floral and fruity St-Germain Elderflower Liqueur. Whether you choose to top with champagne or a sparkling wine like Prosecco, you won't go wrong!
The Pom Royale looks elegant served in either a coupe or a flute champagne glass, and depending how much pomegranate juice you add, has a rosy to deep blush hue perfect for gatherings over the festive season. My recipe balances with equal parts pomegranate juice to St-Germain, but feel free to adjust according to your taste and colour preferences.

Pom Royale
Ingredients
1/2 oz pomegranate juice, 100% juice
1/2 oz St-Germain Elderflower Liqueur
4 oz Prosecco
pomegranate arils, garnish
Method
In each champagne flute or coupe glass, add pomegranate juice and St-Germain liqueur. Top glass up with Prosecco and give a light swirl. Garnish with a few pomegranate arils.
