As summer has come to an end and we transition into fall I feel like summer needs one final hoorah. 2020 has been a difficult year and this summer has continued to challenge us - covid, racial inequalities, raging forest fires, smoke induced poor air quality, moth infestations, to name just a few. So many are being and have been affected. My hope is that fall brings some much needed systemic change and calm across the globe.
This week's cocktail of the week is the Late Summer Twinkle. It is, at heart, a champagne cocktail. The Twinkle was originally crafted at The Lonsdale in London, UK, as a Downton Abbey - inspired Christmas drink...wasn't that a fabulous series? My version, the Late Summer Twinkle is meant for warmer weather, using chilled sparkling rosé wine, instead of prosecco (or champagne), as is in the original cocktail. Prosecco is lovely in this cocktail, however the sparkling rosé gives the drink a lovely blush hue that in my books is an ode to summer's blooms and beautiful sunsets.
So, this weekend, I'm going to gather a few close friends (distanced of course), make the Late Summer Twinkle and toast "good-bye" to summer and "hello" to fall and all that it may bring.

A Late Summer Twinkle (adapted from here)
Makes one cocktail
Ingredients
1oz vodka
1/2 oz St-Germain Elderflower Liqueur
4 oz sparkling rosé wine, chilled
lemon twist, garnish
Method
In a cocktail shaker add vodka and St-Germain. Add ice and shake until shaker is cold, or has condensation on the outside. Strain mixture into a Nick and Nora glass. Top with chilled sparkling rosé. Garnish with a lemon twist and enjoy!
