Spicy Mango Margaritas For Cinco De Mayo

Next week is Cinco De Mayo. A global holiday every year on May 5th celebrating all things Mexican - traditions, culture, bright colours, cocktails and food! You can't think of Mexico without the vision of a fabulous Lime Margarita. Today there are so many different variations of the Margarita, from watermelon to prickly pear. So, in honour of Cinco De Mayo, this week's #cocktailoftheweek is a Spicy Mango Margarita.

The sweet and spicy flavour combinations in this margarita hits the spot both when the sun is out and after it's set. It's a definite crowd pleaser.

I also love the pop of colour that this cocktail brings to any fiesta or celebration. It's two toned bright orange hue (rimmer and drink) adds a focus to the otherwise natural desert elements of the Outdoor Desert Inspired Fiesta Tablescape shown in images (full blog post here).

Whether you mix up an individual drink or make a pitcher full, I hope you sit back, celebrate all things Mexico and enjoy this fiesta in a glass!

Spicy Mango Margaritas

makes 1 drink

Ingredients

2 oz tequila

1 oz cointreau

1 oz lime juice

1/2-1 oz agave syrup*

2 oz mango juice (or purée, see Recipe Note below**)

2-3 jalapeño rings + more for garnish

lime wedges + thin wheels for garnish

2 tablespoons chile lime salt, rimmer

Method

On a small plate, pour chile lime salt. Take a lime wedge and run flesh side down along the rim of a margarita glass. Place damp glass rim into the chile lime salt, rotating to cover entire rim.

In a cocktail tin add agave syrup (add amount to desired sweetness) and jalapeño rings. Muddle lightly until jalapeños release their oils. Then add tequila, cointreau, lime juice and mango juice. Top tin with ice and shake until the tin becomes chilled. Strain into rimmed margarita glass and garnish with a lime wheel and jalapeño ring.

Recipe Notes:

*To make agave syrup add 1/4 cup agave and 1/4 cup of water. Heat until liquids combine, either on the stove or in the microwave in 30 second increments. Add desired amount to cocktail - the more you add the sweeter the drink will be.

**If you don't have or can't find mango juice (I am writing this during a global pandemic, so only shopping once a week, I had to improvise. If you are like me, make a purée instead. Into a high speed blender (like Vitamix) add 2 mangoes that are cut in half and then cut into cubes and 1/4 cup of water. Blend until puréed.
