This week, with fall and back-to-school quickly approaching, I'm dreaming of Hawaii and my last tropical vacation there a few years ago. One of the ways I like to remember holidays and the wonderful countries I've been lucky to travelled to, is by cooking different foods that I ate when I was there. After a bite or two, I instantly remember how I felt when I was there.
So, for breakfasts this week, I'm treating myself to tropical fruit bowls, like those you might find in casual breakfast spots and food trucks in Hawaii. After biting into this bowl, I was struck by the Hawaiian heat, the sound of the waves, the scent of fresh blooming flowers and the amazing fresh fruit.
This recipe is merely a blueprint. Feel free to substitute any fresh or dried fruits and nuts you have on hand to help bring that island feeling to your day!

Hawaiian Papaya Breakfast Bowl
makes one hearty breakfast
Ingredients
1/2 papaya, seeds removed
1/2 cup greek yogurt
1/2 banana, thinly sliced
1/3 cup blueberries
1 tablespoons nut butter (I used almond, but wouldn't macadamia nut butter be amazing!)
2 tablespoons granola
1-2 tablespoons roasted & shredded coconut
1 tablespoon goji berries
1 tsp hemp hearts
1 tablespoon honey (Manuka honey from Hawaii would be fabulous here)
Method
Take papaya half and add yogurt into the middle hollow, spreading it to fill the length of the papaya fruit. Top with banana, blueberries, nut butter and granola. Sprinkle coconut, goji berries, hemp hearts over top. Drizzle with honey.
