With Mother's Day fast approaching, I wanted to create a cocktail that I knew my mom would love. Something delicate and light. The French 75 is a go-to cocktail with our family. It's refreshing and great all year round, whether for a fancy celebration or a patio. In keeping with the decor for our Mother's Day festivities this year, I wanted the cocktail to be pink. So, I decided to make a small batch of pomegranate gelato and placed a tiny scoop into each coupe cocktail glass to give the drink a hint of colour. The gelato creates the most beautiful pink ombré affect as the gelato slowly melts. Mom loved it.

Mom's Pink French 75
For the Pomegranate Gelato (adapted from here)
Ingredients
3 cups pure Pom pomegranate juice
1/2 cup sugar
1 lemon, juice & zest
Method
Combine pomegranate juice, sugar lemon zest and lemon juice in a small saucepan. Bring to a rolling boil and reduce to simmer for 10 minutes, until liquid begins to reduce. Remove from heat and allow to cool.
Once cooled, process in an ice cream maker until thickened, but not hard.
Scoop gelato into a container and freeze until ready to use in drinks (it would be fabulous for dessert as well!).
For the French 75
Ingredients
1.5 oz gin
1/2 oz simple syrup (1 part sugar to 1 part water syrup)
1/2 oz lemon juice
3-4 oz sparkling wine or prosecco
Garnish: lemon spiral & rosemary leaves
Method
Fill a cocktail shaker with ice. Add gin, simple syrup, lemon juice and shake until well chilled, about 30 seconds. Strain into champagne coupe glasses. Top with sparkling wine or prosecco.
Add one small cookie scoop of slightly softened pomegranate gelato to each coupe and garnish with lemon spiral and rosemary leaves.
