I'm so excited - grapefruit is currently in season and they are looking amazing this year!
As a kid, I loved to eat bitter grapefruits, cut in half with a light dusting of granulated sugar over the top. This recipe for Maple Rosemary Grapefruit is a grown up version of my childhood grapefruit and sugar indulgence. It's easy to prepare, and has way more flavour than sugar sprinkled fruit.
Broiling the cut grapefruit adds, not only a nice light smoky and caramelized top, but also warms the entire fruit, making it a perfect dish for winter! This fruit dish is so light and refreshing. In fact, if you come across a beautiful ripe grapefruit, this dish can be made and enjoyed any time of year, not just in winter.
Maple Rosemary Grapefruit halves are amazing eaten on their own for breakfast, lunch, dessert, or a snack. They are also fabulous served with a dollop of Greek Yogurt and a sprinkling of chopped roasted pistachios.

Maple Rosemary Broiled Grapefruit, serves 4 (1/2 per person)
Ingredients
2 pink or ruby red grapefruits, cut in half horizontally
1-2 tablespoons maple syrup (honey can be substituted here)
1 teaspoon rosemary leaves, finely minced
pinch of salt (optional)
Method
Pre-heat oven to broil. Using a pastry brush, rub maple syrup on cut side of grapefruit. I use 1 tablespoon per 2 grapefruits (4 halves), however if you like things a bit more on the sweeter side, or you are serving these for dessert use 2 tablespoons of maple syrup per 2 grapefruits. Sprinkle grapefruit tops with a very small pinch of salt, if using. Place grapefruit halves onto a lined baking sheet. Broil for 3-5 minutes until maple syrup becomes caramelized and just slightly browned. Keep an eye on the grapefruits, as they burn quite quickly. Remove baking sheet from oven and sprinkle with minced rosemary. Allow to cool slightly and serve.
