You'll want to make this asap! I'm not sure if it's a salad, appetizer or main dish, but it is pretty darn good. Serve this to a crowd with some grilled crusty bread and watch them smile. I first saw this flavour combination on epicurious.com while I was searching for Halloumi recipes.
Halloumi is a semi-firm, brined cheese from Cyprus. It can be made from a mixture of goat and sheep's milk, however I've also seen it made from exclusively from cow's milk. It has a high melting point so it's the perfect cheese to grill, without it turning into a goopy mess. It's slight salty taste and squeaky firm texture pair perfectly with soft grilled tomatoes and sweet watermelon.

Tomatoes Watermelon and Halloumi
Ingredients
1 package of Halloumi cheese, sliced into 1/4 -1/2 inch pieces
1/4 watermelon cut into wedges
cherry tomatoes (I pulled mine from the garden, vine included - this makes it easier to grill!)
1-2 tablespoon extra virgin olive oil
basil leaves
1 teaspoon pepper
*pinch of chili flakes (optional)
1 loaf crusty baguette
Method
Heat outdoor grill to medium temperature.
On a large baking sheet, lay flat the Halloumi slices, cherry tomatoes and large pieces of halved baguette. Using the oil, lightly brush the cheese, tomatoes and bread on both sides.
Place bread on grill for 1-2 minutes, then turn for an additional 1-2 minutes.
Remove bread from grill and place on baking sheet to cool slightly.
Add Halloumi and tomatoes to grill. Cook for 1-2 minutes or until grill marks develop. Turn Halloumi over for another 1-2 minutes.
Remove cheese and tomatoes from grill and place on baking sheet.
Meanwhile, arrange watermelon onto a platter. Top with grilled Halloumi and tomatoes. Add fresh cracked pepper, torn basil leaves and pinch of chili flakes if using. Serve with crusty baguette pieces.
