Grapefruit & Herb Spritz Mocktail

My Mom spends a significant part of the year in Palm Springs, California. Recently she's been asking for some mocktail recipes that have the same flavour of a cocktail, but without the alcohol. As there is an abundance of grapefruit and citrus near her home, I decided to test out some mocktail recipes using grapefruit as the base flavour.

The Grapefruit & Herb Spritz Mocktail is pretty simple to put together. It requires a small amount of prep ahead of time, and then you will have the ingredients ready for days of sipping. First, freshly squeezed grapefruit juice, an important element of the drink's balanced flavour can be done ahead, and second, the honey rosemary syrup, which adds a sweet, earthy note can also be made the day before.


This mocktail would also be perfect for a crowd. It can be batch made and partially mixed if you are entertaining or serving a crowd. Add all of the ingredients together, except the club soda, and refrigerate until just before your guests arrive. Add the club soda and garnish right before serving.


It's still winter in Vancouver, so I have to imagine the Palm Springs sun while I sit back and sip this Grapefruit & Herb Spritz. Hopefully you too, can enjoy this sipper, either sitting in the sun, or while imagining the sun, like me. I know my Mom will certainly be enjoying one of these sometime soon!

Grapefruit & Herb Spritz Mocktail

Makes 1 drink


Ingredients


For The Honey Rosemary Syrup

1/2 cup honey

3/4 cup water

2 rosemary sprigs


For The Grapefruit & Herb Spritz Mocktail

4 -6 oz fresh grapefruit juice (I used pink grapefruits - the quantity of juice depends on how strong you want the grapefruit flavour to be)

1 oz honey rosemary syrup

4 oz club soda (I also enjoy lime flavoured club soda)

grapefruit slice, garnish

1 sprig of rosemary, garnish

Method


For The Honey Rosemary Syrup

In a small sauce pan add honey, water and rosemary sprigs. Bring to a low boil. Stir to ensure honey and water is combined, about 1-2 minutes, then remove from heat. Allow syrup to steep and cool for 30 minutes, then remove rosemary and discard. Pour syrup in a glass container. Keeps refrigerated for up to 2 weeks.


For The Grapefruit & Herb Spritz Mocktail

In an old fashioned glass, add grapefruit juice and honey rosemary syrup. Top glass up with club soda. Gently stir to combine. Add a large ice cube and grapefruit and rosemary garnish.


Recipe Notes:

*If you do want to add alcohol to this drink, I suggest replacing the club soda with 4 oz of Prosecco. This will maintain the light, crisp feel of this warm weather sipper.


Recipe Update: My mom has tried this recipe a few times now and likes to substitute Fever Tree Tonic Water for the Club Soda. If you prefer Tonic to Soda Water, try this substitution!
