Let's face it, as soon as I see food served in a Mason jar, I'm sold. The years of only using jars for canning are long gone. Mason jar's are so versatile, they can be used for almost anything. I love to use mine for salads and lunches, like this Christmas Greek Salad. I like to keep a few jars of salad, like this Greek Salad, or veggies in the fridge for a quick lunch or when I need a snack. They're perfect for busy days during the holidays! Change up the colours of the lid and ring on the Mason jar and these Christmas Greek Salads are festive enough to bring to a friend or on an outing.
Have you noticed that most of the ingredients in Greek Salad are red and green, Christmas colours? Greek salad is loaded with great veggies like peppers, tomatoes, red onions and cucumbers. Throw in a bit of white sparkle from some brined feta and "ornaments" from the chopped olives and you have a holiday ready salad.

Christmas Greek Salad In Mason Jars
(makes 2 - 500ml Mason Jars)
Ingredients
1 red bell pepper
1 green bell pepper
4 Persian cucumbers (the smaller ones)
1/4 red onion
20 cherry tomatoes halved
10 black Kalamata olives
feta cheese
2 tablespoon extra virgin olive oil (1 tablespoon per jar)
2 tablespoon good quality balsamic vinegar (1 tablespoon per jar)
salt and pepper (optional)
Method
De-seed red and green peppers and cut into bite-size chunks. Quarter and cut cucumbers into small pieces. Dice red onion and halve cherry tomatoes. Pit and chop Kalamata olives, and slice feta cheese into small pieces and cubes. Measure 1 tablespoon of extra virgin olive oil and 1 tablespoon of balsamic vinegar into each 500 ml Mason jars. Starting with the most watery vegetable, the tomatoes, layer, alternating the red and green colour vegetables. I put the feta layer in the middle and sprinkled the olive pieces throughout. Add salt and pepper if using. Secure lid onto jars and refrigerate until ready to eat. Shake well prior to serving. Jars will last for 2-3 days refrigerated.
