Chocolate Bunny Kisses Easter Cocktail


Okay, so sometimes we've got to do things because they're cute and they make us smile. This Easter, with everything happening in the world, we are all searching for things that make us smile. I hope this Chocolate Bunny Kisses dessert cocktail brings as big a smile to your face, as it did to mine.

My tastes in cocktails tend to be boozy (like manhattan's, old fashioned's and negronis) or floral and citrusy (gin-based citrus drinks like gimlets, French 75's and sours). The Chocolate Bunny Kisses Cocktail is really neither of those things. It's creamy, a little bit fruity (from the mint and strawberry), a little bit sweet and slightly boozy (careful, have a few of these and it might jump up on you!).


This cocktail is meant to be an after dinner dessert. It's for the chocolate lover and those that would rather drink their dessert than eat it. Bonus, you get a chocolate easter bunny when the cocktail is finished!

Chocolate Bunny Kisses Cocktail, adapted from here

makes 2 bunnies


Ingredients

2 hollow chocolate Easter bunnies

4 strawberries, cut into chunks

3-4 mint leaves + 3-4 leaves for garnish

1 oz simple syrup

4 oz vanilla vodka (it's Corona times, don't have vanilla vodka, no worries - combine 4 oz of vodka to 1/4 tsp of vanilla stir and let infuse for 30 minutes on the counter (ratio 1 cup vodka: 1 tsp vanilla)

1 oz Frangelico (hazelnut liqueur)

1/2-3/4 oz Irish Cream

edible flowers, garnish


Method

Using a sharp knife, slice off the top of the hollow chocolate bunny ears. In a cocktail shaker add strawberries, mint and simple syrup. Muddle until fruit juices are released. Add vanilla vodka, Frangelico and Irish Cream. Fill tin with ice and shake until tin is chilled and liquid is frothy. Strain into a glass and funnel into the ears of a hollow chocolate Easter bunny. Garnish with a mint sprig, and serve with a paper straw immediately. I added a few small ice chips to keep the drink chilled.
